Position Title: Chef de Partie
Location: Segera, Laikipia County
Reporting to: Head Chef

Goals and objectives: The role of Chef de Partie is very important to Segera as a retreat as it brings together several functions under the same position. The bearer of this position is expected to ensure high standards of service delivery within the retreat while still remaining a team player.
Duties and Responsibilities
- To lead subordinates, suggest possible new measures, means and ideas to the Chef on duty.
- Supervision of the food production for all food requests and other special requests in accordance with the Segera standards.
- In exceptional situations, to support the department and section, duty hours may be extended until the work is completed and also if the required/delegated work has not been achieved.
- To help train in the proper handling and maintaining of all equipment within the Kitchen and preparation area thus ensuring the proper upkeep of all equipment and the prevention of damage and loss of property.
- The rotation of all perishables on a daily basis, making sure that all containers are properly labeled, wrapped and stored.
- To attend all kitchen and staff meetings as scheduled.
- Give attention productivity of the kitchen such as speed and food quality.
- Ensure adherence to all relevant health and safety standards.
- Follow instructions and recommendations from the HOD to complete the daily tasks.
- Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation.
- Full awareness of all menu items, their recipes, methods of production and presentation standards.
- Follow good preservation standards for the proper handling of all food products at the right temperature.
- Operate and maintain all department equipment and reporting of malfunctioning.
- Ensure effective communication between staff by maintaining a secure and friendly working environment.
- Establish and maintain effective inter-departmental working relationships.
- Check periodically expiry dates and proper storage of food items in F&B Kitchen.
- Should be able to set an example to others for personal hygiene and cleanliness on and off duty.
- Daily feedback collection and reporting of issues as they arise.
- Any other duty which may be assigned by the management from time to time.
The ideal candidate must have the following minimum qualifications:
- Certificate/Diploma in culinary arts from a recognized institution
- Proven experience in a Chef de Partie role
- Excellent use of various cooking methods, ingredients, equipment, tools and processes
- Ability to multitask.
- Ability to work efficiently under pressure.
- Great time management skills
- Great communication and interpersonal skills
- Knowledge of best and latest cooking practices
- Flexible working hours subject to the demands of the business
